It looks like the beginning of winter is in FULL effect. The rain didn’t stop me from getting a few workouts in annnnnnd staying busy in the kitchen! Instead of going out to eat we opted on cooking up a storm. On the menu for Sunday:[Lentil soup] [Garbanzo Bean Salad] & [Homemade Raviolis] Does it get any better?? I love soup and this is the perfect season for it. See the recipe below!

What you’ll need:

  • 3 cloves minced garlic
  • chopped yellow onion
  • diced celery & carrots
  • tomato paste
  • zucchini
  • 1 cup fennel
  • 3 bay leave
  • dried thyme
  • salt/black pepper
  • 1/4 cup lemon juice
  • 1/2 bunch choppep fresh dill
  • 1 1/2 cup lentils

Start by cooking the carrots, onion, celery with olive oil on a med heat. The beans are SEPARATE! This is important. Start the lentils on a boiling temperature and then bring to a med heat and let the beans cook through. This will prevent them from splitting and being too mushy. Once they are finished-drain them and then add the bean water to the carrots, onion and celery. From there add the fennel, tomato paste (about half a small can), bay leaves, salt, pepper, dried thyme, dill, zucchini and let them simmer on a low heat. When the soup is near done, add the lentils and serve. I like to add feta cheese to the top just to add a little texture. Enjoy!

Happy Wednesday! It’s the holiday season which means online and in store shopping is in full force. I am the worst when it comes to Christmas shopping and usually wait until last minute. You would think I would get better at this, but no. Time is money and well, finding the time is the hardest part. In the meantime of trying to shop for everyone, these are a few of my favorite items on repeat for the last 3 weeks. It’s winter and for once in the bay area it’s been freezing -ish so it’s time to bundle up! I have been obsessed with sweater vests and actually found a cute grey one at  Lou and Grey last week. This one is similar except sleevless. Annnnnnd it was on sale for $40! Score! I am all about the infinity scarfs, stripes and booties as well. What’s not to love, they are both cute and stylish. That Swell bottle pictured above is also a great addition to your everyday water intake. Think: Less plastic and more hydration. Good luck with your Christmas finds!!

5 Tips For A More Confident You.

Attract what you expect. Reflect what you desire. Become what you respect. Mirror what you admire.

 

1. Set Goals

This is the most important thing for your life. So many times we have an idea of what we want the next week, month or year to look like and then we get discouraged when there are no results. There is no such thing as action without a plan. While planning it is important to keep these goals attainable. I was listening to Joel Osteen the other day, and he mentioned how we often become hard on ourselves and forget to appreciate progress success. If what you are doing today is better than what you were doing yesterday than you should be grateful. Start a list and cross those goals off.

2. Action.

Do something you have been procrastinating about. I know, we are all guilty but how good does it feel when you are able to say, “I did it!…even if there is a,” finally!” Take up a new exercise class, find a new recipe, eat healthier. Usually if we make the decision to complete this task early in the day it sets the tone for the rest of the busy hours we all experience.

3. Know Your Thoughts.

Listen to your thoughts both positive & negative. What drives you to be this way? Knowing yourself builds better confidence to maintain success in the future.

4. You are what you think.

This take practice and patience. Say positive affirmations to yourself instead of constantly repeating negative thoughts over and over about all the things you dislike. Remember, you are alive, you are healthy and most importantly you are able to control your mind with PRACTICE.

5. Be Kind.

First, be kind to yourself. Second, speak nicely about others. Be an encourager. The world has enough critics without credentials already. It’s a great feeling to know you are helping others.

Remember: Confidence is not, “Hey will they like me.” Confidence is, “I’ll be fine if they don’t.”

Snapshot of my week. Can we talk about Adele? OMG! I cannot stop listening to this album. On repeat to the maxxx. Now she needs to announce her US tour or I will be forced to head to Europe and sing my best version of these songs in person! This week was pretty basic. I found myself on a local bloggers website, Thanks Stephanie! I got a couple workouts in despite this freezing weather (I know, it can be tough) & lastly, I listened to Adele about 1,000 times. I am headed to the Los Gatos Christmas parade to see Santa (obviously) and Sunday I am San Francisco bound for a birthday. Hope you all have a great weekend!

Beautiful. Gross. Strong. Thin. Fat. Pretty. Ugly. Sexy. Disgusting. Flawless. Woman. Amy Schumer, I don’t think you could have summed up any better what us women go through on a daily basis. I saw this picture and couldn’t help but think, “Wow! That is a real woman!” Our brains are flooded daily from the moment we wake up and begin scrolling on Instagram and  Facebook comparing our lives and expectations to the millions of other people in this world. Why is she so pretty? Why is she so skinny? Why is she traveling so much? Why don’t I have this life? Why are my boobs so big, hips so wide, hair so thin? The questions and assumptions can go on and on and what continues to go on is the fake reality of what WE as WOMEN are “supposed” to look like and go through every day. Monday we feel ready to conquer the week (beautiful), Tuesday maybe we didn’t get enough sleep (tired), Wednesday we had a great workout (fit and thin), Thursday we might have eaten a bit too much at the work lunch-in (fat) and Friday, well….Friday we count down to 5pm and are ready for our two favorite words: Saturday & Sunday! I am grateful that someone of some sort of power can reach a crowd of people and show, hey this is what I look like and I feel great. I am not perfect, I never will be perfect but I embrace what I have been given and work hard at maintaining exactly that! Thanks, Amy.

Here is peak at my Thanksgiving day! Being vegetarian usually leads to me cooking up a storm. This year I made a beet salad, green bean casserole, the parmesan crusted cauliflower that I posted about last wek and those slow cooker mushrooms. Lastly, I whipped out the kitchen aid for some chocolate chip cookies! Everything turned out to be a success. If you’re looking for a fast easy side dish that cauliflower was on point. Now to burn off all the calories consumed over the weekend! Happy Tuesday!

Cheers to an almost 4 day weekend! If you’re like me you are required to work a half day today you make the best of your time and blog it up. The upside of this morning is that there was no traffic at all, and if you live in the Bay Area or anywhere where traffic can be a pain in the butt you appreciate this for every minute you sailed right through. So tomorrow, we have three options: Get up early and run Turkey Trot, Lay in bed until duty calls, or make the most of your morning while remaining breakfast savvy and make a delicious breakfast for those beloveds of yours! I probably wont be sleeping in because I never do…so I will most likely go with option number 3!

What you’ll need:

  • organic eggs
  • veggies [your choice- I like zucchini, mushrooms, tomatoes]
  • rustic or red potatoes
  • extra virgin olive oil
  • salt/pepper/garlic powder

Breakfast is soooo easy. I know most people love their eggs over easy, sunny side up etc. but I am a scramble only kind of girl. Yes, plain eggs can be boring after a while therefore I like to mix it up. I add my favorite veggies, usually grated zucchini, mushrooms and diced tomato. For the potatoes you can use either rustic or red [diced], with a yellow onion and green bell pepper. I use extra virgin olive oil and season with salt, pepper and garlic powder. Start them on a med-high heat so they can brown and reduce to a low heat so they can cook after browning. If you’re thinking about a post Thanksgiving breakfast you can always toss some of that ham in the scramble for some extra flavor!

Happy Almost Thanksgiving! Crazy to believe #1 that it is already the end of November, and #2 that the holiday season has begun! Thanksgiving is probably my favorite holiday considering I have a slight obsession with all things food: grocery stores, prepping, cooking…and well the vino of course! I have been browsing Pinterest the last couple of days trying to find some vegetarian side dishes that I am usually responsible for. Last year I made stuffed mushrooms, beet salad, brussels sprouts and I think if my memory serves me right I did a pumpkin cheesecake as well. YUM! I am salivating just thinking about it. This year I am leaning towards a slow cooker recipe for the mushrooms and roasted cauliflower with parmesan cheese (pictured above).

Since I don’t have a lot of time off on a regular basis (2 jobs, gym, traveling etc.) it will be nice to soak up 2 full days of rest and relaxation. All about Dat Bacon.

Note to Self: When going to the Beer & Bacon Festival BYOS (Bring your own snacks!) Obviously as a vegetarian I wasn’t in my element, but nonetheless it was a great time! The B&B Classic was held at San Jose Municipal Stadium in downtown San Jose. Local food and beer venders from around the Bay Area were where there with bacon treats….bacon scallops, bacon candy and heck there was probably bacon beer too! I will say, that churro was the bomb dot com and worth every calorie! The 20 or so local participating restaurants included Firehouse No. 1 Gastropub, Las Cazuelas, Habana Cuba, Psycho Donuts, Stanley’s Sports Bar, 7 Stars Bar & Grill, East Coast Alice and more. The 40 breweries and cider companies included, among others, Strike Brewing Company, Gordon Biersch, Wildcide Hard Cider, Golden State Brewery, San Francisco Mead Company, Speakeasy Ales & Lagers, Half Moon Bay Brewing Company and Mavericks Brewing. There was also full access to the field with this event! It my first time to the stadium, and probably won’t be my last. Next time I’ll stick to the baseball events and leave more bacon for everyone else! Sunday was a beach day. Let’s just say I can never get enough sunset views. New week, new goals…Let’s do this!
