Happy Monday Friends! Hard to believe fourth of July is Ova! Time flies when you have too much fun. This weekend was great. I took a few days to sort of check out and simply relax. I tend to work a lot, so getting time off can be tough, but this weekend just happened to be in my favor. 3 days off means getting out of town. I know when we leave town or have a holiday weekend we tend to make up excuses that it’s okay to eat like crap, but this wasn’t the case for us. I would say for a 3 day weekend we did pretty good in the food department. All it takes is a little bit of planning and by that I mean hopping on Pinterest and gaining some new ideas on some recipes. We managed to have a fairly healthy meanu! All it takes is practice…EVERYONE can cook, you just have to try!!

WEEKENDS

This weekend was so much fun! I headed to Santa Cruz with the pup to catch some sunshine. It’s hardly been any type of winter here in CA but i’ll take it anyway. Nothing beats flip flops, t-shirts and 75 degrees in the beginning of March. Yes I did splurge on some ice cream and yes that is the pretties sunset (pictured above). Sometimes all you need to reboot is to take a drive, relax and get your mental thoughts in order for the next week. I started working out again last week (circuit training) and so my body was a bit tired through the recovery of the first couple workouts. I know, that ice cream counteracts the workout process but hey, burn to earn, right?! I am looking forward to a great week and wish you all the same!

Weekend Recap

Hello Friends! What a game last night, right?! Although the Niners weren’t in the Superbowl, we still made sure to watch until the last minute. All I can remember is everyone saying, “Anybody but the Seahawks!” It looks like dreams really do come true. Great job, Patriots!  Until the next SB which will be held in our very own Santa Clara, CA!

-Moving-

I am in the process of moving into a new apartment which means this quick impulse to want to buy everything in sight. I visited Crate & Barrel over the weekend, and in the midst of kitchen goods I came across this Meatless Monday cook book. Paul, Stella and their daughter Mary McCartney launched the Meat Free Monday campaign as a simple straight forward way of showing everyone the value of eating less meat. Just one day each week of not eating meat can contribute to saving debt in your wallet, and more importantly reduce your environmental impact. One day less of eating meat each week can also reduce your risk for heart disease and maybe even help you drop a couple LBS! Who doesn’t love that?! Even if you can’t imagine becoming vegetarian, this is a great way to incorporate more nutrients into your diet. Just think, baby steps. I just ordered this cookbook on Amazon. You should too!

-WORKOUT-

I made sure that among that Superbowl and excess shopping for my apartment that I did make some time to get a workout in. That above is not the stairway to heaven my friends, but rather the stairway to a better looking booty and stronger legs! We call this Communication Hill which consists of 252 steps. Four rounds up and down and I was DONE! Needless to say, today my calves are feeling very sore! #nopainnogains

OH MY GOSH! Next month marks the eleventh month of the year and guess what that means!? It’s  my birthday month AND I will be turning THIRTY! When in the hell did this happen?? As the day approaches I not only can’t believe that I will be thirty years young but really feel as though I have never felt better. I think when you are younger (at least for me) you envision your future to be “something” and whatever that “something” is….you either meet your expectation or often times surpass what you ever could have imagined. For me, at this point, traveling is my number one priority. In a few weeks I will be Portlandia bound!  In all my travels this is one place I have been wanting to go for a while. For the last couple years have heard nothing but amazing things. I love food, I love organic everything, I love the outdoors…now if I can only beat the rain (that is one thing I don’t love 🙂 )! This is one place that I hear when it rains…..it literally pours! Regardless, I can’t wait to get my booty to the beautiful state of Oregon. If you have any suggestions please let me know. Let the planning begin!

It’s Friday my friends! This week seemed like it flew by faster than usual possibly because the sun was shining a bright 80 degrees?? Unreal.  I feel accomplished, healthy and grateful that the weekend is here. My workouts were on point (I’m feeling pretty sore) as I am trying to get back on track from taking some time off. You never realize how in shape you are until you don’t work out for a while. Never again am I letting this happen.  I took some time off for the month of December because I was in charge of opening a new restaurant in Los Gatos. Man, I am not sure how I survived the long days and not being able to workout. Being continuously busy from when you rise to when you go to sleep is not the business and I am glad to have a couple more hours out of my day that I can spend as “me time.” In a few weeks I will be jet setting to Phili + NYC for a best friends birthday. She will be turning 29…..crazy! Who said getting older can come so fast! It will be 4 of us reuniting and I couldn’t be more excited. Good friends, girl talk, catching up, lots of wine and making new adventures….does life get any better!? I am wishing all of you a happy weekend!

Yeahhhhh….it’t Friday! I am beginning to look forward to the weekends more and more these days. When you are so busy with events, work and trying to find a social life in between nothing sounds better than a litter R&R! The weather here in California has been nothing short of amazing although not so good for the environment. I think we have 70’s on the forecast for this weekend which is a little strange for January, but hey, I am not complaining! Anyway, I’ll be relaxing as well as cooking up a storm, visiting my local farmers market and getting a few workouts in. What are you up to??

Cilantro Chili-Lime Prawns

I made cilantro chili – lime prawns yesterday for a friends BBQ. I feel like I always try to think outside of the box when bringing things to parties mostly so people can try new things, but also because the regular stuff like potato salad, fruit salad and whatever else can often be boring. This recipe was really easy and fast. I am always browsing the internet for new recipes and am very glad I stumbled upon this one. One thing I want to say- is that just because there is a recipe doesn’t mean you can’t change a few things here and there.

What you’ll need for this:

  • 1 teaspoon grated lime zest ( I didn’t have a zester so I excluded)
  • 1/4 teaspoon fresh lime juice (make sure the limes you choose are squishy)
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons low-sodium soy sauce
  • 1 jalapeno chili (minced)
  • 2 tablespoons chopped cilantro leaves
  • 1 tablespoon minced garlic
  • 1 tablespoon sugar
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne
  • 1 1/2 pounds medium shrimp in shell ( I picked up already shelled but raw shrimp from Whole Foods)

Directions:

Marinate the shrimp. In a medium bowl, stir together lime zest, olive oil, soy, jalapeno, cilantro, garlic, sugar, chili powder, and cayenne. Peel the shrimp, leaving on tails.

Rinse, and then pat dry with paper towels. Put the shrimp in a large zipper bag, pour the marinade over, close the bag, pushing out any air and rub the marinade into the shrimp. Refrigerate for 20 minutes. ( I refrigerated for about 2 hours until we were ready to BBQ).

Preheat grill to medium-high. You can skewer the kabob, or if you don’t have kabob sticks, simply stick the shrimp w/ marinade in foil and close tight. Place on grill and wait about 6 -7 minutes or until finished cooking. Prawns cook pretty fast, so keep an eye on these bad boys.

For the Quinoa- Mango Salad:

  • 1 cup quinoa or couscous
  • 1 zucchini
  • 1/2 bell pepper
  • 1 mango
  • 1 tablespoons chopped (italian) parsley leaves
  • chicken stock (optional) you can cook the quinoa in this for more flavor- I did not.
  • 1/4 red onion
  • 1/2 jalapeno
  • 1 lime

Directions:

Cook the quinoa as you would rice. for 1 cup quinoa use 2 cups water or stock. Set aside when done.

In a separate pan, saute parsley, jalapeno, bell pepper and zucchini with olive oil. I don’t like to cook my veggies all the way through for quinoa salad because I like the extra crunch. When veggies are near done, add red onion and mango in with veggies just to give a little warm up ( 2 minutes max). Add all ingredients together with quinoa. I like to add a little more olive oil, salt, pepper and and juice from lime to add flavor to salad. Top with prawns and you are done!

Add some corn tortillas and this is great for tacos! Enjoy!

It’s Friday baby and Labor Day weekend! Hard to believe summer is already nearing its end but I can’t wait to kick up my feet and make time for some R&R the next couple of days. Hope you all have a fabulous 3 days off. See you Monday!

Happy Monday friends! What a great weekend. I recently moved into a new place a couple of weeks ago during my transition from San Jose to New York. The new situation is totally relaxed (unlike the last) and my new roommate loves to entertain. With that said, I have been wanting to have people over for a brunch of some sort. It was very last minute but I managed to put together a pretty delicious menu. The menu included a vegetarian quiche, ham quiche (for my meat lover friends), french toast with fresh berries, fresh whipped cream, breakfast potatoes and plenty of fruit! I don’t normally consume these breakfast foods but sometimes you have to splurge a little. Let’s just say it was a nice treat from the steel cut oats, juices and no sugar items I usually eat. The turnout was perfect, about 10 people and before I knew it the mimosas were in full force along with the food being devoured quickly! I love cooking but more importantly, I love hosting for others and showing them that home made food isn’t that hard, can be organic and enjoyed in moderation and tastes delicious! From what I heard, the food was a success and there will have to be another brunch before I move! Can’t wait!

One of my favorite weekend hang-out spots is Rootstock wine bar in Los Gatos. It’s perfect for a little afternoon snack and they have great patio seating. The wine bar itself is quaint as they only serve beer, wine and small plates but a great venue for a catch up sesh with friends or a romantic date with your guy/gal. I went there last weekend after strolling through the town, sat outside and enjoyed a couple of my go to appetizers. My favorite item is the beet salad {pictured above} which is a must try. It has yellow beets, goat cheese and arugula….and well, my second favorite is those green olives! I can’t get enough. If you’re in the area and get a chance you should check this place out. Enjoy this summer weather before it’s over.
